Zucchini Rollatini 

There are some people who love zucchini, and some who don't, if you don't then this dish wasn't meant for you (I'm sorry!). But if you love zucchini as much as I do, and the cheese don't get me started. This dish is perfect- melt in your mouth perfection. The richness and the depth of flavor due to the many different cheeses used in this dish. Be sure to give it a try and I promise you'll definitely enjoy it.  

Ingredients:
  • 2 large zucchinis
  • salt
  • pepper
  • olive oil
  • 1 cup ricotta cheese
  • 1/4 cup fresh basil
  • 1/2 cup pecorino romano
  • 1 garlic clove
  • 1 egg
  • 1 cup marinara sauce
  • 1 cup mozzarella 

Instructions:

-Thinly slice the zucchinis. Then season the slices with salt, pepper and olive oil. Next grill the zucchini slices for 10 minutes at 180C.

-In a bowl, mix together ricotta, fresh chopped basil, pecorino romano, diced garlic and an egg.

-Spread the cheese mixture over the grilled zucchini slices and gently roll the slices.

-In a Pyrex dish, add the marinara sauce, then place your zucchini rolls. Top the rolls with more marinara and the shredded mozzarella.

-Bake at 200C for 20-25 minutes. 

-And you're ready to serve. Bon Appetit!
