- medium sized potato
- olive oil
- salt
- cornstarch
- vegetable oil
Instructions:
-Peel and grate the potato.`
-Transfer the grated potato to a pan.
-Half cook the potato in olive oil and a pinch of salt on medium heat.
-Compact the cooked potato in a bowl, wrapped in plastic wrap.
-Place a heavy weight and freeze the potato.
-Once frozen, cut in to small cubes.
-Cover the cubes with cornstarch.
-Fry the potatoes in vegetable oil til golden.
