Ingredients:
  • ricotta cheese 
  • pecorino romano 
  • salt and black pepper 
  • baguette 
  • olive oil
for the topping:
  • olive oil
  • garlic 
  • cherry tomatoes 
  • salt and black pepper 
  • fresh basil

Instructions:

-In a Pyrex, add the ricotta, shredded pecorino romano, season with salt and black pepper, mix the ingredients together, next add more pecorino romano on top. Then bake for 20-25 minutes at 180C.

-Slice a baguette and place the slices on a baking sheet to drizzle with olive oil. Then bake till golden.

-In a pan, heat the olive oil and garlic, then add the cherry tomatoes, season with salt and black pepper and add chopped fresh basil. On low-medium heat sauté for 10-12 minutes.

-Add the sautéed cherry tomatoes to your baked ricotta, and garnish with fresh basil.

-And you’re ready to serve. Enjoy!!
