Tahdig Recipe (Crispy Persian Rice)
Tahdig Rice is a Crispy Persian Rice with basmati rice as the main ingredient. The rice is super crispy at the base and full of flavor and fluffy at the top. Saffron is a great addition to this dish too, it adds a strong smell and a depth of flavor. Give this recipe a try and don't forget to share the crispy base with your loved ones. Bon Appetit!!!!
- 2 cups Basmati rice
- water
- 3 tbsp salt
- olive oil
- saffron
- 2 tbsp yogurt
Instructions:
-Prep your saffron water.
-Wash your basmati rice multiple time, before soaking it overnight in water.
-Fill your pot with water and add the salt.
-To your salted water add the rice and a generous amount of olive oil.
-Let it cook for 10 minutes, then rinse.
-To a bowl, add 1 cup of cooked rice, yogurt and saffron water.
-Back to your pot, add olive oil, yogurt-cooked rice as your base and top it with the rest of the rice.
-Poke some hole in the pot and add olive oil to the top.
-Put your lid on and cook the rice for 15 minutes on medium heat.
-On low heat, continue cooking for extra 45 minutes.
-Add the rest of your saffron water to the holes and let it sit.
-Slowly flip your rice to your serving plate.
-Enjoy!!!
