Have a couple of leftover beets? look no more! We tried the viral TikTok upside down puff pastries recipe with beets, feta and arugula. 
The recipe is so fresh from the greenery, sweet from the balsamic, creamy from the feta and earthy from the beets. 
Not only that but the pastries or the tiny tarts are so pleasant to look at. Bon Appetit!!!

Upside Down Balsamic Beet Tarts
Ingredients:
  • puff pastries 
  • cooked beet
  • arugula
  • feta cheese
  • thyme 
  • salt
  • olive oil 
  • balsamic vinegar 
Instructions:
Upside Down Balsamic Beet Tarts

-Slice a cooked beet to thin slices.

-On a baking sheet, add olive oil, balsamic vinegar, salt and thyme.

-Place the cooked beet slices on the vinaigrette.

-Cover the beets with puff pastry sheet.

-Press the pastry sheet with a fork and pierce the center.

-Brush the top of the pastry sheets with olive oil.

-Bake the pastry tray for 20 minutes at 180C or till golden.

-Once done, flip the pastries upside down.

-Serve with arugula and crumbled feta cheese.

-Bon Appetit!!!
