Salmon Sushi Muffins

Sushi is great! so great, I mean it. But did you ever feel like having sushi and you were discouraged because of the many, hard steps it takes? No more! Salmon Sushi Muffins is the easy sushi experience. Prep your veggies, get your salmon and sauces, leftover rice will do, nori sheets and of course the muffin/cupcake pan. That's it!

Ingredients:

  • cucumbers, diced
  • carrots, diced
  • green onions, diced 
  • 1 cup sushi rice, cooked
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 tsp sesame seeds
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar 
  • salmon
  • kewpie mayonnaise
  • sriracha 
  • soy sauce 
  • nori seaweed sheets 

Instructions:

-Dice your veggies. (cucumbers, carrots, and green onions)

-Season your sushi rice with the sugar, salt, sesame seeds, sesame oil, and rice vinegar. (feel free with the measurements)

-Season your salmon with the kewpie mayonnaise, sriracha, and soy sauce.

-In the muffin pan, place the nori sheets and the seasoned sushi rice.

-Add the seasoned salmon on the rice. 

-Bake at 180C for 5-7 minutes.

-Add to your baked sushi muffins the diced veggies, more kewpie mayonnaise, and garnish with sesame seeds.

-Serve with kimchi sauce, kewpie mayonnaise, and soy sauce on the side.

-And you're done. Bon Appetit!
