Greek Eggplant Meatballs
This Greek eggplant meatballs will be your new favorite- given you enjoy eggplants taste and you're looking for a meat-less meatballs. It's a great vegetarian option, or as an appetizer. It is a versatile dish, and most important it taste so good. So, Bon Appetit in advance.
Ingredients:
- 2 medium eggplants
- 1 red onion
- olive oil
- salt & black pepper
- 1 cup breadcrumbs
- 2 eggs
- a bunch of parsley
- shredded pecorino romano cheese
- mozzarella cheese cubes
Instructions:
-Prep your veggies by cubing your eggplants and chopping the onion.
-In a pan, drizzle olive oil, then add the onion and the eggplants.
-Cook on low-medium heat and season with salt and pepper.
-In a bowl, add the cooked onion-eggplant and top with the breadcrumbs, eggs, parsley and shred a generous amount of pecorino romano.
-Mix it together, then form eggplant balls and add the mozzarella cubes to the center.
-Coat the balls with breadcrumbs. Next, fry.
-Once you’re done frying, you can garnish with more fresh parsley. Enjoy!!
