Creamy Peanut Miso Chickpea Salad Sandwich

Chickpea Salad Sandwich will be your new favorite quick meal. It tastes like a middle eastern sandwich with a hint of asian. The sandwich has creaminess from the peanut miso paste, crispiness from the lettuce, freshness from the tomato, tanginess from the sourdough bread and the most important ingredient, the star of the show: the chickpeas. So, enjoy your meal.

Ingredients:
  • 2 sourdough bread slices
  • 1/2 cup cooked chickpeas 
  • 1 tsp peanut butter 
  • 1 tsp miso 
  • 1/2 tsp rice vinegar 
  • 1/8 tsp ginger 
  • 1/8 tsp cinnamon 
  • 1/4 tsp cumin 
  • 1/8 tsp cayenne
  • 1/4 tsp garlic powder 
  • 1/2 red onion 
  • a bunch of green onions or chives 
  • lettuce 
  • tomato 
  • sriracha sauce

Instructions:

-Prep your veggies by dicing the red onion, thinly slicing the tomato and chopping the green onion.

-In a bowl, add in peanut butter, miso and rice vinegar. 

-Next, add in the spices aka ginger, cinnamon, cumin, cayenne and garlic powder.

-Mix in all the ingredients to form a creamy mixture. You can use water to loosen the mix.

-In a different bowl, mash the cooked chickpeas, then add the creamy mix, the red onion and the chopped green onion.

-Get your sourdough slices and place the lettuce as a base.

-Top the lettuce with creamy chickpeas and tomato slices.

-And you’re ready to dig in. Enjoy!!
