I'm not vegan, but I enjoy me a tofu/vegan dish every now and then. This vegan taco salad bowl is a chefs kiss. It's filled with veggies, tofu, beans, spices and the sauce is so creamy.
It's great and quick dish if you are vegan or looking for a rest from your red meat intake. Bon Appetit!!!
Ingredients:
- tofu
- chili powder
- onion powder
- paprika powder
- garlic powder
- sour cream
- sriracha
- lemon juice
- a pinch of salt
- water
- avocado
- sweet corn
- arugula
- black beans
- pickled red onion
Instructions:
-Break up the tofu block and season with chili, onion, paprika and garlic powder.
-In a bowl, add sour cream, sriracha, lemon juice, salt, water and paprika.
-In a different bowl, add avocado, lemon juice and salt.
-On medium-low heat, cook the corn and the tofu separately till golden.
-Assemble your plate by adding arugula, cooked tofu, black beans, corn and mashed avocado.
-Drizzle the sour cream sauce on top and add the pickled onion.
-Bon Appetit!!
