Mushroom & Kale Stuffed Spaghetti Squash

Spaghetti Squash is one of my favorite dishes to make around winter time for several reasons, it's healthy, can replace pasta and many more. 
One of the easiest way to cook the spaghetti squash is by stuffing it with vegetables. And now it's your turn to give this recipe a try and enjoy!!!

Ingredients:
Mushroom & Kale Stuffed Spaghetti Squash
  • spaghetti squash 
  • olive oil
  • salt and pepper 
  • 1 pack (200g) of brown holland mushroom
  • 200g to 300g of kale
  • 5 garlic cloves
  • 1 small red onion or shallot 
  • parmesan cheese

Instructions:

-Halve the spaghetti squash and clean the inside.

-Brush the squash over with olive oil, salt and pepper.

-Bake the spaghetti squash for 35-40 minutes at 180C or till fork tender.

-Thinly slice the mushrooms and chop the kale.

-Mince the garlic and the onion.

-In a pan, sauté the garlic and the onion in olive oil.

-Add the kale and mushroom to the sautéed garlic and onion.

-Season the veggies with salt, pepper and more olive oil.

-Once the squash is ready use a fork to scrap the strands.

-Add the sautéed veggies to the squash and shred parmesan on top.

-Send the squash bake to the oven for the final bake for 10-15 minutes at 180C.

-Serve the spaghetti squash and enjoy!!!!
