Halloumi, Butternut Squash, Kale and Tahini Salad 

Knock, Knock!! It's fall knocking on our doors and it's time to pull out your fall/winter recipes. This Butternut Squash salad is everything you want this fall, the steamed kale, the tahini dressing and most importantly the fried halloumi. Every bite in this salad is rich and filling. It can be served as a side dish/ appetizer or even as a main dish such/dinner.

Ingredients:
    Halloumi, Butternut Squash, Kale and Tahini Salad
  • 1/2 butternut squash
  • 2 red onions 
  • a bunch of kale
  • halloumi 
  • pine nuts
  • tahini paste 
  • 1/2 lemon
  • pomegranate seeds
  • fresh mint 
  • olive oil
  • salt
Instructions:

-Peel the squash and cut to mid-sized cubes.

-Cut the onions to wedges.

-Add the squash, onions to the baking sheet, then salt and drizzle olive oil.

-Bake the veggies till fork tender.

-Chop the kale and discard the stems, then steam the kale.

-Slice the halloumi to thick slices and fry.

-Toast the pine nuts for a rich flavor.

-In a bowl, mix together tahini, lemon juice, salt, olive oil and water.

-To the baking sheet, add the kale, pine nuts and pomegranate seeds and mix.

-Assemble the service plate by adding the veggies and halloumi on top.

-Drizzle the tahini mix on top.

-Garnish with more pomegranate seeds and mint.
