Summer season is the best time to start trying all the viral salad recipes that we've been holding on to. Cowboy Caviar is a salad made up of many veggies and colors- something like a rainbow explosion in your taste buds at each bite.
The recipe is best served cold with chips and shared with your loved ones or maybe a friday night while watching your favorite show, if that's your vibe of course.
Enough with the introduction and start chopping the ingredients, ooh and did I mention you'll be chopping ALOT.

Ingredients:
  • 1 red bell pepper 
  • Cowboy Caviar
    1 yellow bell pepper 
  • 1 orange bell pepper 
  • 1 jalapeño 
  • 2 medium sized tomatoes 
  • 1/2 red onion 
  • 1 avocado 
  • 1 can corn
  • 1 can black beans 
  • 1 can black eyed peas
  • 1/2 cup olive oil 
  • 1/4 cup apple cider vinegar 
  • salt and pepper 
  • chili powder 
  • a pinch of sugar 
  • 1/2 lime, juiced

Instructions:

-Dice the red, yellow and orange peppers to small cubes.

-Take extra care while dicing your jalapeño.

-Pick medium to small sized tomatoes to dice.

-Finally, dice the red onion and the ripe avocado.

-To a large bowl, add all the diced veggies.

-Next, add corn, black beans and black eyed peas.

-Drizzle the olive oil and the cider to the ingredients.

-Season with salt, pepper and chili.

-Add a pinch of sugar, to kick in the flavors.

-Lastly, add the lemon juice.

-Serve with chips and enjoy!!
