Breakfast Tortilla

Breakfast Tortilla is a perfect recipe for when you want a healthy breakfast/brunch. The given ingredients are interchangeable, consider it cleaning your fridge from all the leftover veggies. For the cheese, I would opt for a salty version, the mozzarella was light, but something salty would've given it a kick.
Be sure to give your tortillas a little edge burn as shown in the pictures, it will have a better crunch to each bite.

Breakfast Tortilla
Ingredients:
  • 5 tortilla sheets
  • cherry tomatoes 
  • mushrooms 
  • fresh spinach 
  • shredded mozzarella 
  • 4 eggs
  • heavy cream
  • a pinch of salt
  • black pepper 

Instructions:

Breakfast Tortilla
-Halve the cherry tomatoes and thinly slice the mushrooms.

-Place the tortilla sheets on the baking tray.

-Add the tomatoes, mushrooms and spinach to the tray.

-Shred a generous amount of mozzarella on the veggies.

-In a bowl, beat the eggs with salt, pepper and heavy cream.

-Pour the egg mixture over the veggies.

-Shred more mozzarella on top.

-Bake at 180C for 10-15 minutes or till the eggs are set.

-Enjoy!!!
