Lasagna Soup
The Viral Lasagna Soup was finally tried and cooked by me and let me be straight, I Love It!!!
It's fun! and if you love pasta, soups and your classic red sauce, you'll love it too. It's rich and warming in the cold weather, and it is a great source of protein- mine was RICH!!!
Now moving to the easiness, I'll be honest, I underestimated the recipe but then it ended up taking some time. But again it was worth it and I was part of the viral lasagna soup.

Ingredients:
- 1 red onion, diced
- 6 garlic gloves, minced
- parmesan cheese, shredded
- 5 tbsp olive oil
- 1 kg minced meet
- 2-3 tbsp tomato paste
- 700g passata/ tomato puree with basil
- 500g barilla lasagna sheets box
- 2 tbsp mascarpone
- 100 ml cooking cream
- salt
- pepper
- dried basil
- dried thyme
- around 3L water
Instructions:
-In a pot, add minced meat to the hot olive oil and cook.
-Midway through cooking add the onion and garlic to the meet.
-Season the meet with more olive oil, salt, pepper and basil.
-Add the tomato paste and passata to the mix.
-Keep adding the water to give it a soupy mixture.
-Start breaking the lasagna sheets in your soup.
-Add the mascarpone and heavy cream to give it thickness.
-Finalize with loads of shredded parmesan and stir for extra couple of minutes.
-Serve the soup with extra mascarpone and parmesan.
