Potatoes are great, but potato layers are even greater and zucchini salad adds freshness to the warm oven baked dish. It's a great classic, I would serve for lunch or even dinner. Bon Appetit!
Ingredients:
- potatoes
- olive oil
- pecorino romano
- black pepper
- zucchini
- cherry tomatoes
- fresh basil
Instructions:
-Thinly slice your potatoes. (I used mandoline)
-In a baking dish, place a layer of potatoes, then gently brush with olive oil. Next top with pecorino romano and black pepper.
-Repeat the previous step for as much layers as you prefer.
-Bake at 180C for 45-50 minutes or till golden.
-Start prepping your salad by slicing your zucchini, cutting your tomatoes and chiffonade the fresh basil.
-In a bowl, add the veggies, black pepper and shredded pecorino romano, then mix.
-Once your potatoes are done, top with your fresh salad.
-Serve warm and Bon Appetit!
