Potato Pave (Mille-Feuille) | 15-hour Potato Recipe

Potato Pave (Mille-Feuille)

This potato recipe may have many names, but one thing for sure you'll LOVE it. It takes around 2 days to make, (hold on!) but it is totally worth it. The layers, the crisp, the roasted garlic, honestly everything. So, try it and share with us your opinion. Bon Appetit!

Ingredients:
  • 2 medium/large sized potatoes 
  • 2 roasted garlics
  • olive oil
  • a high boiling point oil

Instructions:

-Thinly slice your potatoes. (I used mandoline slicer)

-Cut a whole garlic head, drizzle with olive oil, wrap in aluminum, and roast. (should take somewhere between 40-50 minutes)

-Wait for the roasted garlic to cool down before extracting the fragrant meat to mash to soft paste.

-In a bowl, add the potatoes, mashed garlic and a generous amount of olive oil. 

-In a Pyrex, pile the potatoes. Then bake for 50-60 minutes at 180C.

-Allow the Pyrex to cool before adding weights on top of the potatoes, then freeze for 24 hours.

-Cut the frozen potatoes in to rectangular figures. Then deep fry.

-Sprinkle some salt for flavor. Bon Appetit!
